Easy Rhubarb Galette

It looks like a tough one, but this might just be the easiest recipe on our site…

RhubarbThere are certain seasonal treats that come into view so suddenly and then disappear without a word that you almost forget they even happened. Figs, peaches, blackberries – and rhubarb. Such a lip-puckering stalky vegetable (I want to call it a fruit but that would be wrong), rhubarb has an amazing ability to turn sweet when baked. It might be the sugar, of course. But still. It’s transformation is pretty amazing. 

This Easy Rhubarb Galette is a simple way to enjoy any seasonal fruit really. Just swap out the Rhubarb for whatever else is in season you’re off to the races. 

INGREDIENTS

1, one-pound package of puff pastry, thawed

2 cups fresh rhubarb, diced

1 cup fresh strawberries, diced

1 teaspoon fresh ginger, grated

1 tablespoon lemon juice, fresh squeeze

1/2 cup granulated sugar

1 egg, whisked

Mint (for garnish)

Icing sugar (for garnish)

METHOD

Pre-heat your oven to 400°f

Put rhubarb, strawberries, ginger, sugar and lemon juice in a bowl and mix well to combine; let sit for about 30 minutes

Flour a countertop or other clean surface and roll out puff pastry so it is about a 1/4 inch thick

Cut a circle in the pastry (can be almost any diameter); repeat as many times as needed, depending on the size (we made three galettes)

Fill the centre of the pastry with rhubarb and strawberry mixture, leaving about an inch of pastry all the way around

Fold the edges of the pasty over the fruit and pinch them wherever they naturally fold

Place galettes on a baking tray lined with parchment paper

Brush edges with egg and sprinkle with sugar

Bake for 30 minutes

Remove from oven and let stand for 5 to 10 minutes

Place on a plate, add a sprig of mint, dust with icing sugar and serve

TIPS

*Try serving this with some fresh whipped cream or vanilla ice cream

*You can use just about any fruit – experiment with what is in season

*Save some of the liquid from the strawberry and rhubarb mixture and drizzle it overtop of everything
